taxa update to TOL-10M, retrained

Based on retraining with the TreeOfLife-10M taxonomic patch (realignment using TaxonoPy).
I've updated training descriptions to reflect training for 50 epochs (this includes the carbon calculation), but the updated evaluation values still need to be added (there are a few % improvements over openCLIP to update throughout as well).
@vimar , the updated model weights can be uploaded to this PR.
